When viewing Starred email, removing the star (with the s keyboard shortcut) does remove the star (both in Legend and in Gmail), but leaves the message visible in the Starred list, even after switching back to Inbox and then back to Starred. Starring new items in Gmail does result in them appearing in Legend Starred alongside those previously starred items that are no longer starred. Exiting the Windows app and restarting then shows the Starred email list properly, with those unstarred items removed.
