This is not the feature you’re asking for - but might help as a work around -
Check out the options under “Display Settings > Tags”
It’s not the same as highlighting bullets with different colors, but you can use tags, and choose the tag colors to make things visually stand out / look different. (It does only color the tag though, not the entire item.).
